Recipe 7: Strawberry Bread

STRAWBERRY BREAD

This is an old southern recipe from Nashville.

Because it’s so old, you can’t find the 10-oz boxes of frozen strawberries (which were slightly mushy & perfect for this). So if you buy the perfect whole frozen strawberries we have now, you need to cut/smush them so the pieces are small enough for bread and so you can squeeze out the juice to set aside for the cream cheese.

3 C. flour
2 C. sugar
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1/4 C. vegetable oil
4 eggs, well beaten
Two 10-oz packages frozen strawberries

Defrost strawberries. Save 1/2 cup juice for the spread.
Mix all dry ingredients. Make a well in the center of dry ingredients & pour all liquid ingredients in. Mix thoroughly by hand.

Grease & flour or line with greased aluminum foil 2-3 loaf pans. Or I prefer to spread it out among several small loaf pans for more even cooking.
Bake at 325-350 one hour or until done in center.

STRAWBERRY SPREAD

One 8-oz package cream cheese
1/2 c. strawberry juice
Soften cream cheese to room temperature. Add strawberry juice, creaming until smooth.
